Bake this simple recipe for light, healthy bread – bake two at a time if you like – and enjoy one for breakfast by adding your favourite dried fruit! Good fibre in the diet, bread is everyone’s favourite.

Baguette bread made with Multi-grain, whole wheat or white flour

Ingredients:
500g/18oz white bread flour
500g/18oz Multigrain or whole wheat bread flour
12g/1 tbsp dry yeast
12g/1tbsp white granulated sugar
12g/1 tbsp fine sea salt
25g/2 tbsp Virgin olive oil
600ml/2.5 cups hot water

Breakfast bread:
Add 350g/12oz dried fruit
50g/4 tbsp butter

Method:
Put both flours into a large mixing bowl (use KitchenAid if you have one), add yeast, sugar, salt, olive oil and water.
Mix well together 5-8 minutes until all ingredients well mixed together
Remove mix and knead gently by hand into a ball – should be a soft but firm consistency
Place in greased container, metal or plastic bowl and cover with plastic bag.
Set in warm spot for 45 minutes to allow mixture to rise
Then: Repeat the kneading process 3 more times – this allows the bread dough to develop at a healthy pace.
Remove dough from the container and place on a rolling board to relax for a further 30 minutes, still covered
Divide dough into four equal pieces, knead each into a round, or long baguette shape and place on a baking tray
Place in the oven with JUST THE OVEN LIGHT ON
Allow to rise for 35 minutes as it will double in volume
Remove from oven

Preheat oven to 400F
Score tops of the bread diagonally in four cuts
Place a tray filled with hot water at the bottom of the oven to maintain moisture during cooking.
Bake bread for 35-45 minutes until a healthy hazelnut colour
